- 29 oz can whole kernel corn
- Nonstick spray
- 1 block softened cream cheese
- 1 16 oz tub yellow queso ( I used Gordo’s homestyle )
- 2 tsp sugar
- 2 tsp Cajun seasoning
- 8 oz block cheddar shredded
- 1 stick of butter
- Sleeve of ritz crackers
Instructions
- In a bowl place queso and cream cheese , combine well with hand mixer
- Then add Cajun seasoning, sugar and can of drained corn
- Do this by hand with a spatula , next grease casserole dish with non stick spray
- Then pour mixture in dish
- Top with shredded cheese
- Then melt butter and crush crackers
- Combine the two
- Then sprinkle the cracker mixture all over the top of your casserole , bake at 350 degrees for 30 minutes or until golden and bubbly

- Remove let cool for 10-15 then enjoy !
