Ingredients

  • 29 oz can whole kernel corn
  • Nonstick spray
  • 1 block softened cream cheese
  • 1 16 oz tub yellow queso ( I used Gordo’s homestyle )
  • 2 tsp sugar
  • 2 tsp Cajun seasoning
  • 8 oz block cheddar shredded
  • 1 stick of butter
  • Sleeve of ritz crackers

Instructions

  • In a bowl place queso and cream cheese , combine well with hand mixer
  • Then add Cajun seasoning, sugar and can of drained corn
  • Do this by hand with a spatula , next grease casserole dish with non stick spray
  • Then pour mixture in dish
  • Top with shredded cheese
  • Then melt butter and crush crackers
  • Combine the two
  • Then sprinkle the cracker mixture all over the top of your casserole , bake at 350 degrees for 30 minutes or until golden and bubbly
  • I also did mine on my pellet grill
  • Remove let cool for 10-15 then enjoy !
