Ingredients

  • 16oz. Hummus
  • 2 Roma tomatoes (diced)
  • 1/2 English cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • 1 tsp. red wine vinegar
  • 1 tsp. Olive oil
  • 1/4 cup sliced black olives
  • 1/4 cup feta cheese crumbles
  • 1 tbsp. dill weed
  • 1/2 tsp. sea salt
  • 1 cup plain Greek yogurt
  • 1/2 English cucumber (finely grated, drained)
  • 1 tbsp. lemon juice
  • 1 tbsp. dill weed
  • 1 tsp. Greek seasoning

Instructions

  • In a mixing bowl, combine the tomatoes, diced cucumber, red onion, dill weed, red wine vinegar, olive oil, and sea salt.
  • Toss well and set aside to allow the flavors to come together.
  • In a separate bowl, mix all of the tzatziki ingredients until well combined, then set aside.
  • To assemble, spread the hummus evenly onto a plate or serving platter.
  • Layer the tzatziki over the hummus, followed by the tomato and cucumber salad.
  • Top with olives and sprinkle with feta cheese.
  • Finish with a drizzle of olive oil and a light sprinkle of Greek seasoning, if desired.
  • Serve with pita chips, warm pita bread, or fresh cucumber slices.
