Alabama Cheese Fries

Ingredients

  • 5 russet potatoes
  • Cajun seasoning
  • 2 tubs bacon up or your preferred frying oil
  • 8 oz block cheddar
  • 8 oz block pepper jack
  • 3 fresh jalapeños
  • 1 pound bacon

Instructions

  • Cut potatoes into fries either with a knife or fry cutter
  • Soak for 40 minutes changing water half way through
  • Then let drain for thirty minutes
  • Shred both blocks of cheese
  • Fry chopped bacon , reserving the grease and add your bacon up
  • Fry fries till golden brown
  • Then fry sliced jalapeños for about a minute
  • Build fries and then place under broiler to melt cheese
