Babe’s Marinated Italian Chicken

Ingredients

  • 2lbs. boneless chicken
  • 1/2 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 2 tbsps. Italian seasoning
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 3 cloves chopped garlic
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
  • 2 tbsps. lemon juice

Instructions

  • In a large zip-top bag or airtight container, combine all of the ingredients except the chicken and mix well until fully blended.
  • Add the chicken, making sure each piece is evenly coated in the marinade.
  • Seal and refrigerate for at least 2 hours, though overnight will give you the best flavor.
  • When you're ready, cook the chicken using your preferred method-grill, bake, or pan-sear—until perfectly done and juicy.
  • Serve and enjoy!
