Preheat the grill to 300°F and set it up for indirect heat.
Using a sharp knife, carefully make a slit down the center of each hot dog, being careful not to cut all the way through.
Slice the string cheese in half lengthwise, then stuff each hot dog with one half.
Wrap each hot dog with bacon and secure with a toothpick on both ends.
Place the hot dogs on the grill grates and cook for 40-45 minutes, or until the bacon is fully cooked and crisp.
Remove the toothpicks before serving.
These can also be prepared in the oven at 400°F for 15-25 minutes, or until the bacon is cooked through.
