Baked Hush Puppies

Ingredients

  • 2/3 C Yellow Cornmeal
  • Vegetable oil to grease Pan
  • 1/3 C All Purpose flour
  • 1 tsp baking Powder
  • 3/4 tsp salt
  • 1/8 tsp black Pepper
  • 1/2c grated onion
  • 1/3 c milk
  • 2 Lg eggs
  • 2 Tbsp unsalted butter, room Temperat
  • 1/8c granulated sugar
  • Jalapeno Peppers (optional)

Instructions

  • Preheat oven to 450°.
  • Lightly grease a 24-Cup Mini muffin Pan.
  • In a medium bowl, combine Cornmeal, floor, baking Powder, Sugar, Salt & Pepper.
  • In a separate bowl, mix the onion, milk, eggs, butter + Jalapenos.
  • Fold mixture into the flour mixture until well blended.
  • Spoon 1 Tbsp of batter into each of the mini Muffin Cups.
  • Bake 10-15 minutes, or the Hush Puppies are golden brown & firm.
  • Remove from oven & let cool 5 minutes.
