Form burgers into 3 oz balls let them sit in fridge for at least an hour
Then let’s make the blooming onion sauce
Mix mayo , sour cream , ketchup , horseradish , garlic , salt & pepper, oregano , paprika and cayenne
Mix well and place in fridge
Slice onions thin ( I used a mandolin) season flour with Cajun seasoning
Place bacon up in skillet reserve just enough to toast buns
Once bacon up hits 350
Place onions in flour , then egg mixture then back into the flour
Fry till golden brown
Place burger balls on hot griddle , sprinkle with seasoning
Once seared flip ball then press flat
This will keep your burger press from sticking
Season that side
Once it has a good sear flip add cheese and let is finish
Build burger and enjoy
