Blueberry Balsamic Glazed Salmon

Ingredients

  • For the salmon
  • 1 tbsp olive oil
  • Salt and black pepper
  • Fresh thyme or basil OR zest for garnish
  • Glaze-
  • 1 cup fresh or frozen blueberries
  • 1 tbsp fresh lemon juice
  • 1/2 tsp lemon zest
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey or hot honey

Instructions

  • Prep the salmon: Pat the fillets dry. Rub them with olive oil, salt, and black pepper.
  • Air fry the fish: Preheat your air fryer to 400°F (200°C). Place the salmon fillets in the basket skin-side down. Cook for 7 to 10 minutes, depending on the thickness, until the fish flakes easily with a fork.
  • Make the sauce: While the salmon cooks, combine blueberries, lemon juice, zest, balsamic vinegar, and honey in a small saucepan on the stove over medium heat. Simmer for 5 minutes until the berries burst and thicken.
  • Assemble: Plate the air-fried salmon and spoon the warm berry glaze right over the top. Garnish with fresh herbs or the zest of any citrus.
