Poke holes in the potatoes, coat with olive oil and sprinkle with salt
Bake in an air fryer at 400°F for 45 minutes
In a pan, add oil and a small amount of butter, then sauté the bell peppers for 2–3 minutes
Season the bell peppers with Cajun seasoning
Add garlic and sauté for 1–2 minutes
Add shrimp and cook for 1–2 minutes, flip and cook another 1–2 minutes
Pour in the heavy cream
Mix in the parmesan cheese
Reduce the sauce until thickened
Add parsley
Cut open the potatoes, add butter and shredded mozzarella
Pour the shrimp alfredo over the potatoes
