Cajun Shrimp Alfredo Baked Potato: Easy Comfort Food Recipe

Ingredients

  • Russet potatoes, cleaned
  • 1/2 pound peeled and deveined shrimp
  • 1 1/2 cup heavy cream
  • 1/2 cup grated parmesan
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1 tbsp minced garlic
  • Butter
  • Salt
  • Olive oil
  • Cajun seasoning
  • Hot sauce
  • Parsley

Instructions

  • Poke holes in the potatoes, coat with olive oil and sprinkle with salt
  • Bake in an air fryer at 400°F for 45 minutes
  • In a pan, add oil and a small amount of butter, then sauté the bell peppers for 2–3 minutes
  • Season the bell peppers with Cajun seasoning
  • Add garlic and sauté for 1–2 minutes
  • Add shrimp and cook for 1–2 minutes, flip and cook another 1–2 minutes
  • Pour in the heavy cream
  • Mix in the parmesan cheese
  • Reduce the sauce until thickened
  • Add parsley
  • Cut open the potatoes, add butter and shredded mozzarella
  • Pour the shrimp alfredo over the potatoes
