heat the olive oil in a heavy-bottomed pot over medium heat
add the rice and toast for about 4 minutes, stirring occasionally, until lightly golden and fragrant
add the onion and garlic, and cook for an additional 3-4 minutes until softened
stir in the seasonings, bouillon, tomato sauce, and water
bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes without stirring
remove the pot from the heat and let it sit, still covered, for another 15 minutes
fluff the rice with a fork before serving
thinly slice the chicken into strips and place in a mixing bowl
drizzle with 2 tablespoons of olive oil, tossing to coat evenly
add the seasonings and mix well
heat the remaining olive oil in a skillet over medium-high heat
add the seasoned chicken and cook for 8-10 minutes, or until fully cooked and lightly browned
prepare the Gordo's Cheese Dip according to package directions
plate the rice and chicken together and spoon the cheese dip over the top as desired
