Cheesy Chicken and Rice: Easy One-Pot Meal Recipe

Ingredients

  • 2 cups long grain rice
  • 2 tbsps. olive oil
  • 1 yellow onion, Diced
  • 4-5 garlic cloves, minced
  • 1 packet Sazon Seasoning
  • 1 tbsp. chicken bouillon
  • 16 oz tomato sauce
  • 4 cups water
  • 2 lbs. boneless skinless chicken breast
  • 4 tbsps. Olive oil, dived
  • 1 tbsp. Garlic Powder
  • 1 tbsp. Onion Powder
  • 1 tbsp. Chili Powder
  • 1 tbsp Cumin
  • 1 packet Sazon Seasoning
  • 16 oz Gordo's Cheese Dip

Instructions

  • heat the olive oil in a heavy-bottomed pot over medium heat
  • add the rice and toast for about 4 minutes, stirring occasionally, until lightly golden and fragrant
  • add the onion and garlic, and cook for an additional 3-4 minutes until softened
  • stir in the seasonings, bouillon, tomato sauce, and water
  • bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes without stirring
  • remove the pot from the heat and let it sit, still covered, for another 15 minutes
  • fluff the rice with a fork before serving
  • thinly slice the chicken into strips and place in a mixing bowl
  • drizzle with 2 tablespoons of olive oil, tossing to coat evenly
  • add the seasonings and mix well
  • heat the remaining olive oil in a skillet over medium-high heat
  • add the seasoned chicken and cook for 8-10 minutes, or until fully cooked and lightly browned
  • prepare the Gordo's Cheese Dip according to package directions
  • plate the rice and chicken together and spoon the cheese dip over the top as desired
