Preheat your oven to 375°F. Line a baking sheet with parchment paper.
In a bowl, mix the ground beef or ground chicken with the diced onion, salt, black pepper, garlic powder, onion powder, and Worcestershire sauce.
Lay out the tortillas and spread the seasoned meat mixture into a thin, even layer, leaving about a 1/2 inch border around the edges.
Add your cheese of choice over the meat.
Sprinkle on your chopped pickles, diced onions, jalapeños, bacon, or any other toppings you want to use.
Starting from the long side, tightly roll each tortilla into a log.
Slice into 2 inch pinwheels.
Push the pinwheels onto skewers, about 4 to 5 per skewer, until all pinwheels are used.
Place the skewers on the prepared baking sheet.
Bake for 25 to 35 minutes, or until the meat is fully cooked, the tortillas are golden brown, and the cheese is melted and bubbly.
Let cool for a few minutes before serving.
Serve with ketchup, burger sauce, ranch, barbecue sauce, or your favorite dipping sauce.
