Chicken Parm Smashburger Tacos: Easy Weeknight Recipe

Ingredients

  • 1 lb ground chicken.
  • 4 flour tortillas.
  • 1 cup shredded mozzarella cheese.
  • 1 cup Italian bread crumbs.
  • 1/2 cup marinara sauce.
  • 1/2 cup grated Parmesan cheese.
  • 1 tsp all purpose seasoning.
  • 2 tbsp olive oil.
  • Minced parsley.

Instructions

  • Season the ground chicken and roll into loose meatballs
  • Mix the bread crumbs and Parmesan cheese
  • Spread the chicken flattened over the tortilla
  • Press the chicken side down into the bread crumb mix
  • Heat your griddle or pan on medium heat
  • Add the oil to the griddle
  • Place the tortillas chicken side down into the oil on the griddle
  • Cook for 3-4 min or until the chicken is golden brown
  • Flip the tortilla over and cook for another 1-2 minutes
  • This will toast the tortilla and finish cooking the chicken
  • Sprinkle the mozzarella cheese on the taco, it will begin melting as the tacos are finishing
  • Remove and and spoon some of the marinara sauce on the tacos
  • Garnish with parsley, serve and enjoy!
