Season about 20 wings with @cookinwidkunchi Blaxican Fajita seasoning or similar Fajita bend
Smoke at 225° for about a half hour or until around 160° internal
This allows wings to absorb a nice smokey flavor and they'll be about 80% finished
Fry in 350° beef tallow, canola, or peanut oil
Till crispy and around 200° internal temp
Mix Mexican crema with @melindasfoods Chipotle and Jalapeño sauces, and lime juice
Plate and drizzle over wings or toss wings in a large bowl and mix in the sauce
Garnish with lime zest and Taǰín
