Spoon the mixture onto the prepared baking sheet to form clusters, or pour into the molds.
Freeze for at least 4 hours, or until completely firm.
Once frozen, prepare the chocolate coating.
In a microwave-safe bowl, combine the chocolate chips and coconut oil.
Microwave in 30-second intervals, stirring between each interval, until smooth and fully melted (about 1½ minutes total).
Dip each frozen popsicle or cluster into the melted chocolate, allowing any excess to drip off.
Let the chocolate set for about 1 minute before serving or returning to the freezer to fully harden.
