Chocolate Covered Strawberry Yogurt Bars: Easy Treat

Ingredients

  • 1 cup plain Greek yogurt
  • 1 1/2 cup fresh chopped strawberries
  • tbsp. Honey
  • 1 tsp. Vanilla
  • 1 cup semisweet chocolate chips
  • 2 tbsps. coconut oil

Instructions

  • In a mixing bowl, combine the yogurt, strawberries, honey, and vanilla.
  • Stir until everything is well blended.
  • Line a baking sheet with parchment paper or prepare popsicle molds.
  • Spoon the mixture onto the prepared baking sheet to form clusters, or pour into the molds.
  • Freeze for at least 4 hours, or until completely firm.
  • Once frozen, prepare the chocolate coating.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil.
  • Microwave in 30-second intervals, stirring between each interval, until smooth and fully melted (about 1½ minutes total).
  • Dip each frozen popsicle or cluster into the melted chocolate, allowing any excess to drip off.
  • Let the chocolate set for about 1 minute before serving or returning to the freezer to fully harden.
