Chopped Italian Sandwich in Pickle Bun

A chopped sub packed with Italian meats and cheese, stuffed into a tangy pickle “bun” for low-carb bite.

Ingredients

  • 3 Ham Slices
  • 3 Hard Salami Slices
  • 3 Pepperoni Slices
  • 3 Provolone Cheese Slices
  • 2 TBSP Red Wine Vinegar
  • 2 TBSP Olive Oil
  • 1 C Lettuce Iceberg, or Romaine
  • 3 Tomatoes Slices chopped
  • 4 Whole Dill Pickles
  • All Day Everyday Seasoning to taste
  • Italian Seasoning to taste
  • 1/2 C Mayonnaise

Instructions

  • On a large cutting board or work space, slice each whole dill pickle at a 45 degree angle on each side to form a "V" shape in the pickle, remove that quarter slice of the pickle, and scrape out the inside to make a pickle canoe, of sorts. Once completed, set aside
  • On your large cutting board, layer all of the rest of the ingredients, the ham, hard salami, pepperoni, provolone cheese, red wine vinegar, olive oil, lettuce, tomato and seasonings and mayo. Using a sharp knife chop well until each ingredient is in bite sized pieces and chopped well.
  • Scoop up the deli meat mixture and carefully spoon into the prepared pickles. Serve immediately.
