Cottage Cheese Bread

Ingredients

  • 1 cup all-purpose flour
  • 1 cup cottage cheese
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 large eggs, beaten

Instructions

  • In a large mixing bowl, combine all ingredients and stir until a soft dough forms.
  • Cover with a clean kitchen towel and let rest for 10 minutes.
  • Lightly flour a work surface and knead the dough briefly until smooth.
  • Divide and pinch off into small portions, rolling each into a ball.
  • Gently flatten each ball into a disc.
  • Heat a griddle or skillet over medium heat.
  • Cook each piece for 3-4 minutes per side, or until golden brown and cooked through.
  • Serve warm, drizzled with olive oil and your favorite seasonings.
