Creamy Herb Mashed Potatoes: The Best Comfort Food Recipe

Ingredients

  • 4 lbs Yukon Gold potatoes (peeled)
  • 2 cups heavy cream
  • 4 oz salted butter
  • Couple sprigs of thyme
  • Couple sprigs of rosemary
  • 4 cloves of garlic (smashed)
  • Salt and pepper to tas

Instructions

  • Quarter the potatoes
  • Place the potatoes in salted water and bring to a boil
  • Boil the potatoes until fork tender
  • In a pan, add the cream, herbs, garlic and some salt and pepper
  • Bring to a light simmer
  • Once the potatoes are cooked, strain them off
  • Push the potatoes through a ricer
  • Strain the cream mix over the potatoes
  • Gently fold and stir the potatoes until thoroughly combined
  • Check for seasoning, you may want to add more salt or pepper
  • Garnish with more butter and chives
