Crispy Chicken Fried Steak: A Southern Comfort Classic

Ingredients

  • 4 chicken fried steak cutlets (cube steak)
  • 2 cups buttermilk
  • 2 cups self-rising flour
  • 2 large eggs, whisked
  • 1-2 tsp salt
  • 1-2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Oil for frying (vegetable or crisco)

Instructions

  • Place your steaks in a bowl and cover with buttermilk
  • Let soak at least 30 minutes (longer = more tender)
  • Season your flour: In a large bowl, mix self-rising flour with salt, pepper, garlic powder, and smoked paprika
  • Set up your dredge station: Bowl 1: Seasoned flour Bowl 2: Whisked eggs Bowl 3: (Same) seasoned flour again Double dredge for that crust: Take steak from buttermilk
  • Flour → Egg → Back into Flour Press that flour in GOOD so it sticks
  • Fry to crispy perfection: Heat oil in a skillet (about 350°F)
  • Fry steaks 3-4 minutes per side until deep golden brown and crispy
  • Rest it right: Place on a wire rack (not paper towels) so that crust stays crispy
