Crock Pot Red Beans and Rice

Ingredients

  • 10-13 cups water
  • 5 minute rice for serving
  • 2 pounds rinsed red beans ( pick out any bad ones )
  • 1 large white onion chopped
  • 2 green bell peppers chopped
  • 4 stalks of celery chopped
  • 4 tablespoons of minced garlic
  • 1 pound smoked sausage
  • 1 pound salt pork
  • Cajun seasoning ( I ised Malcom’s king craw )
  • Onion powder
  • Cayenne
  • Chicken bouillon

Instructions

  • In crockpot place beans , peppers , onions, celery , garlic , sausage and pork
  • Cover with water
  • You want about 1 inch of water above beans
  • Season to taste
  • And add chicken bouillon, or replace water for chicken broth
  • Cook on low for 8-9 hours , or high for 5-6
  • Last thirty minutes adjust seasoning
  • If beans are too soupy remove about a cup of beans and mash and add back to pot
  • This will help thicken beans
  • Serve over cooked rice and enjoy
