Easy Chilaquiles Casserole With Creamy Cheese and Eggs

Ingredients

  • Torilla chips.
  • 4 eggs.
  • 10oz can of red enchilada sauce.
  • 1/2 cup whipped cream cheese.
  • 1 cup shredded cheddar cheese.
  • 1/2 cup sliced black olives.

Instructions

  • Mix the eggs, enchilada sauce, whipped cream cheese and 1/2 of the shredded cheddar cheese
  • In a greased baking dish, spread out 1/2 of the tortilla chips
  • Pour the 1/2 of the egg mix over the chips
  • Add 1/2 of the black olives and 1/2 of the remaining cheddar cheese over the top
  • Add the rest of the chips, pour over the rest of the egg mix, olives and cheddar chese
  • Place in a 350f oven, cook for 25-30 minutes or until eggs are cooked all the way through
  • Portion out and enjoy!
