Easy Homemade Granola Bars With Peanut Butter And Cranberries

Ingredients

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup coconut oil
  • 1 cup sugar-free maple syrup
  • 6 oz reduced-sugar dried cranberries
  • 1/2–1 cup chopped pecans (to your liking)
  • 1–2 tsp cinnamon (adjust to taste)
  • Pinch of salt (optional)

Instructions

  • Preheat oven to 325°F and line an 8x8 or 9x9 baking dish with parchment paper In a saucepan over low heat, melt together the coconut oil and peanut butter until smooth
  • You can use the microwave also, for about 20 seconds
  • Stir in the sugar-free maple syrup, cinnamon, and salt In a large bowl, combine oats, dried cranberries, and chopped pecans Pour the warm mixture over the dry ingredients and mix until everything is well coated Press the mixture firmly into the prepared pan Bake for about 20 minutes for a soft, chewy texture Let cool completely, then refrigerate for at least 1 hour before slicing into bars TipsPress it down real good so they hold together
  • Slightly underbake if you want them extra chewy
  • Store in the fridge for best texture
