Easy Tater Tot Casserole With Ground Beef and Veggies

Ingredients

  • 2 Tbsp olive oil
  • Yellow onion, chopped
  • 2 cloves garlic, Chopped
  • 1 Pound ground beef or ground turkey
  • Kosher salt & black Pepper
  • 10.5 oz Cream of Celery
  • 1/3 c Ketchup
  • 1 Tbsp Worcestershire
  • 1 cup frozen Cut green beans
  • 3/4 cup frozen Peas
  • 1/2 CUP Frozen Corn
  • 1 Cup Shredded Cheddar cheese
  • 1/4 Parmesan Cheese, grated
  • 3½ cups frozen tater tots
  • Sour Cream & green onions for topping (optional)

Instructions

  • Preheat oven to 450.
  • Heat oil in large skillet over medium heat.
  • Add onion + garlic a season with Salt & Pepper.
  • Cook, Stirring occasionally, until onions are soft.
  • Add beef and cook, breaking it up, until no longer Pink.
  • Add soup, Ketchup, and Worcestershire sauce.
  • Cook Stirring occasionally, until warmed through.
  • Add green beans, Peas, and corn and Cook until warmed through.
  • Remove from heat and stir in Cheddas Cheese.
  • Transfer mixture to an 8×8 inch baking dish.
  • Cover with tater tots then sprinkle with Parmesan.
  • Bake in oven until tater tots are crispy, 30 to 35 minutes.
  • Let rest for a few minutes before serving.
