Place string cheese into jar of pickle juice to marinade for 1-2 days. More time equals more flavor.
When the cheese is nice and soaked in the pickle juice, prepare your frying station. Heat oil to 350F, and mix the pork rinds / breadcrumbs together with grated parmesan cheese. Beat your eggs in a separate bowl, and flour in it's own bowl.
In the following order dip the cheese in eggs, then pork rinds or breadcrumbs, and repeat once more.
Place in hot oil and fry for 2-3 minutes until golden brown. If cheese starts leaking out, that's ok, but remove from oil at this point.
Remove from oil, and let rest on paper towel lined plate for 3-5 minutes to let the cheese cool down and oil to run out - this will prevent a burnt mouth.
Serve hot with ranch, or your favorite dipping sauce.
