Grinder Pasta Salad

Ingredients

  • 18oz. Tortellini
  • 6-8 strips bacon, cooked and crumbled
  • 1 cup mini pepperonis
  • 1/3 cup grated Parmesan
  • 1/3 cup banana pepper rings
  • 1/2 red onion, diced
  • 2.25oz. sliced black olives, drained
  • 1 cup halved cherry tomatoes
  • 1 cup mayonnaise
  • 2 tbsps. red wine vinegar
  • 1 tbsp. Italian seasoning
  • 1/2 tsp. red pepper flakes, optional

Instructions

  • Cook the tortellini according to the package instructions, then rinse under cold water to cool completely and stop the cooking process.
  • In a large mixing bowl, combine all of the dressing ingredients and mix until smooth and well blended.
  • Add the remaining ingredients and gently toss until everything is evenly coated.
  • Cover and refrigerate for at least 1 hour to allow the flavors to come together- overnight is even better.
