In a cast iron skillet over medium heat, cook your ground sausage until it’s fully browned
Don’t drain the grease—that’s where the flavor lives
Sprinkle in your flour and stir it into the sausage and grease
Let it cook for a couple minutes, stirring often, until it starts to turn a light golden color
This step gets rid of that raw flour taste
Slowly pour in the milk while stirring constantly to keep everything smooth
As it heats up, the gravy will start to thicken
Let it simmer for a few minutes, stirring often, until it reaches your desired thickness
If it gets too thick, just add a splash more milk
