Italian Sausage Zucchini Boats: Easy Weeknight Dinner

Ingredients

  • 3 zucchinis
  • 1 lb. Italian sausage
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 1 tbsp. Italian seasoning
  • Marinara for serving

Instructions

  • Set up your grill for two-zone cooking, with one side over direct heat and the other over indirect heat.
  • Slice the zucchini in half lengthwise and scoop out the centers.
  • In a mixing bowl, combine the cheeses and Italian seasoning, stirring until well blended.
  • Spoon the cheese mixture evenly into each zucchini half.
  • Divide the sausage into portions and shape each into a log to fit the zucchini.
  • Gently flatten the sausage and press it over the cheese-filled zucchini, covering the top.
  • Place the zucchini boats sausage-side down over the direct heat and grill for 10 minutes.
  • Carefully flip the boats over, then move them to the indirect side of the grill.
  • Close the lid and continue cooking for 15-20 minutes, or until the sausage is fully cooked and reaches an internal temperature of 160°F.
  • Allow the zucchini boats to cool for a few minutes before serving.
  • Enjoy with your favorite marinara sauce for dipping.
