Jiffy Squash Casserole

Ingredients

  • 2 medium sized squash, cubed
  • 1 cup milk
  • 1 box Jiffy muffin mix
  • 1/2 cup shredded cheese
  • Salt & pepper to taste

Instructions

  • Preheat the oven to 400°F.
  • Lightly grease an 8×8 casserole dish and arrange the squash evenly across the bottom.
  • Season with salt and pepper.
  • In a separate mixing bowl, combine the remaining ingredients until well incorporated.
  • Pour the mixture evenly over the squash.
  • Bake for 25-30 minutes, or until the top is golden brown and set.
  • Allow the casserole to cool slightly before serving.
