Portion the ground beef into 1/4 lb patties and flatten them as thin as possible using parchment paper
Add cheese and bacon to the center of one patty
Season the patty
Place another 1/4 lb patty on top and seal the edges together using parchment paper
Press and shape to ensure there are no gaps
Lightly season the outside of the burgers
Heat the grill to medium heat
Place burgers on the grill and press down for good contact
Close the lid and smoke for 3–4 minutes
Open the lid, flip the burgers, and press again for contact
Close the lid and continue cooking, flipping a couple times until burgers reach about 140°F
Toast the buns with a little butter
