Marinated Tomatoes: Easy Summer Side Dish

Ingredients

  • 4 ripe tomatoes
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp. fresh basil
  • 1 tsp. fresh parsley
  • 1/2 lemon juice
  • 1/4 cup olive oil
  • 2 tbsps. red wine vinegar
  • Salt & pepper to taste

Instructions

  • Slice the tomatoes to your desired thickness and arrange them in a dish.
  • In a mixing bowl, combine the remaining ingredients and mix well to create the marinade.
  • Pour the marinade evenly over the tomatoes and cover.
  • Refrigerate for at least 2 hours before serving to allow the flavors to come together.
