Onion Fritters

Ingredients

  • 2 medium yellow onions, diced
  • 3/4 cup self-rising flour
  • 1 tbsp. cornmeal
  • 1 tbsp. sugar
  • Seasoning salt to taste
  • Cajun seasoning optional
  • 3/4 cup milk
  • Oil for frying

Instructions

  • Preheat a skillet with enough oil for a shallow fry to 350°.
  • In a mixing bowl, combine all of the dry ingredients and the onions.
  • Slowly pour in the milk while stirring until a batter forms.
  • If the mixture seems too dry, add a little more milk- you're looking for a consistency similar to pancake batter.
  • Using a spoon, drop the onion mixture into the hot oil and gently flatten each fritter.
  • Cook until golden brown on both sides.
  • Remove from the oil and place on a wire rack to allow any excess grease to drain.
  • Serve warm.
