  • 12 oz fresh green beans
  • 5 tbsps. bacon up or olive oil, divided
  • 1/3 cup 2 tbsps. grated Parmesan, divided
  • 1/3 cup Italian breadcrumbs
  • tbsp Italian seasoning
  • 2 tbsps. garlic powder, divided
  • Salt & pepper to taste

Instructions

  • Preheat the oven to 425°F.
  • Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the potatoes and 2 tablespoons of oil.
  • Toss until the potatoes are evenly coated, then add 2 tablespoons of Parmesan cheese, salt, and pepper.
  • Toss again to combine.
  • Arrange the potatoes on one-third of the baking sheet and place in the oven for 10-15 minutes to give them a head start on getting nice and crispy.
  • While the potatoes are cooking, add the chicken to a mixing bowl and toss with 2 tablespoons of oil.
  • Add the breadcrumbs, ½ cup Parmesan cheese, Italian seasoning, 1 tablespoon garlic powder, salt, and pepper.
  • Toss until the chicken is evenly coated.
  • Remove the baking sheet from the oven and arrange the chicken alongside the potatoes.
  • Using the same mixing bowl, add the green beans, 1 tablespoon of oil, tablespoon of garlic powder, salt, and pepper.
  • Toss until the green beans are evenly coated, then arrange them on the remaining portion of the baking sheet.
  • Return the baking sheet to the oven and bake for approximately 25 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are golden and crispy.
  • Remove from the oven and allow to cool slightly before serving.
