Prep Time: 15 minutes
Cook Time: 55 minutes
Total Time: 1 hour 10 minutes
Servings: 2

Ingredients

  • 2 sticks butter melted
  • 5-6 ripe bananas
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 1 cup sugar
  • 1 cup honey
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • Optional add-ins: cinnamon chocolate chips, vanilla chips, walnuts, pecans, or your favorite mix-ins

Instructions

  • Preheat the oven to 350 degrees.
  • Spray a loaf pan or muffin pan with olive oil or your grease of choice.
  • Cut a piece of parchment paper to fit the loaf pan, leaving a little extra over the sides so it is easy to lift the bread out after baking.
  • Add the melted butter and bananas to a large bowl. Mash together with a fork until combined.
  • Add the vanilla extract and eggs to the bowl. Use the same fork to mash and mix everything together until well combined.
  • In a separate bowl, whisk together the flour, sugar, honey, baking soda, salt, and any add-ins you are using.
  • Add the dry ingredients to the wet ingredients. Mix with a spatula until just combined.
  • Pour the batter into the prepared loaf pan or muffin pan.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool slightly before slicing and serving.
