Preheat the oven to 350 degrees.
Spray a loaf pan or muffin pan with olive oil or your grease of choice.
Cut a piece of parchment paper to fit the loaf pan, leaving a little extra over the sides so it is easy to lift the bread out after baking.
Add the melted butter and bananas to a large bowl. Mash together with a fork until combined.
Add the vanilla extract and eggs to the bowl. Use the same fork to mash and mix everything together until well combined.
In a separate bowl, whisk together the flour, sugar, honey, baking soda, salt, and any add-ins you are using.
Add the dry ingredients to the wet ingredients. Mix with a spatula until just combined.
Pour the batter into the prepared loaf pan or muffin pan.
Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Let cool slightly before slicing and serving.
