Season steak with AP 5 hours before grilling
Then in the last hour season with steak rub
Then fire up your charcoal grill
You want at least 500 degrees
The hotter the better
Set grill up with a hot side and a cool side
Grill steak directly over coals , flippping every two minutes
Once you have achieved the crust you desire
Move to the indirect side and let it cook till it hits 128 degrees in the dead center
Remove from heat let rest for 10 minutes
Slice and enjoy !
