Steak Bites & Zucchini

Ingredients

  • 2lbs. stew meat
  • 4 zucchinis (cuts into half moons)
  • 2-3 tbsps. all-purpose seasoning (salt, pepper, garlic)
  • 2 tsps. Minced garlic
  • 2 - 3 tbsps. olive oil

Instructions

  • In a mixing bowl, add the stew meat and toss with the seasonings until evenly coated.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the meat and sear on all sides until it reaches your desired doneness.
  • Remove the meat from the skillet and set aside to rest.
  • Reduce the heat slightly and add the minced garlic to the skillet, cooking for about 30 seconds or until fragrant.
  • Add the zucchini and sauté until tender and easily pierced with a fork.
  • Return the steak bites to the skillet and toss everything together until well combined and heated through.
  • Serve warm, and if you'd like, finish with a sprinkle of Parmesan cheese.
