Preheat smoker to 225F using a mild wood like cherry or apple
Place cold cream cheese on parchment paper, or a baking sheet and score in a crosshatch pattern.
Liberally cover it in the sweet seasoning once well combined. Make sure to cover all over on the top 3 sides (excluding bottom).
Place in smoker and let smoke for 1 hour until the cream cheese has started to brown some and gets jiggly. If it starts melting, remove it.
While cream cheese is on smoker, finely chop strawberries and add simple syrup - stir well, cover with plastic wrap, and put in fridge.
When cream cheese is done smoking - remove from smoker and let cool for about 10 minutes, add strawberries on top, and serve with cookies or graham crackers.
