Swamp Cabbage

Ingredients

  • 6 strips thick bacon
  • 1/2 lb. smoked sausage
  • 1/2 yellow onion
  • 1 red bell pepper
  • 1 tbsp. minced garlic
  • 2 stalks celery
  • 1 14oz. can diced tomatoes
  • 1 14oz. can hearts of palm
  • 1 head of cabbage
  • 1 14oz can black eyed peas
  • 1 tbsp. Cajun seasoning
  • 1 1/2 tsps. AP seasoning

Instructions

  • In a large pot, add the bacon and start cooking on low-medium.
  • Cook the bacon 5-7 minutes and then add in the sausage.
  • Cook until the bacon is done and the sausage starts to brown.
  • Once browned, remove the sausage and bacon from the pot.
  • Reserve 2-3 tbsps. of the grease.
  • With the reserved grease in the pot, add in the onion, bell pepper, and celery.
  • Cook until tender.
  • Add minced garlic and cook for 1 minute.
  • Add in the diced tomatoes, juice and all.
  • Add the sausage and bacon back in.
  • Then add the hearts of palm and seasonings.
  • Stir all these ingredients well together.
  • Add in the cabbage and cover.
  • Cook for 15 minutes or until the cabbage is tender.
  • Stir frequently to ensure the cabbage cooks evenly.
  • Once done add in the black eyed peas if using them.
  • Serve when ready.
