In a large pot, add the bacon and start cooking on low-medium.
Cook the bacon 5-7 minutes and then add in the sausage.
Cook until the bacon is done and the sausage starts to brown.
Once browned, remove the sausage and bacon from the pot.
Reserve 2-3 tbsps. of the grease.
With the reserved grease in the pot, add in the onion, bell pepper, and celery.
Cook until tender.
Add minced garlic and cook for 1 minute.
Add in the diced tomatoes, juice and all.
Add the sausage and bacon back in.
Then add the hearts of palm and seasonings.
Stir all these ingredients well together.
Add in the cabbage and cover.
Cook for 15 minutes or until the cabbage is tender.
Stir frequently to ensure the cabbage cooks evenly.
Once done add in the black eyed peas if using them.
Serve when ready.
