Zucchini & Corn Casserole

Ingredients

  • 2 zucchini grated
  • 1 cup whole kernel sweet corn
  • 1 cup shredded cheese
  • 1 cup milk
  • 6 eggs
  • 2 tablespoons bacon grease
  • 1 tablespoon all-purpose seasoning salt, pepper, garlic

Instructions

  • Preheat your oven to 350°F.
  • In an 8x8-inch baking dish, combine the grated zucchini, sweet corn, and bacon grease. Stir until everything is evenly coated.
  • In a mixing bowl, whisk together the eggs, milk, and all-purpose seasoning until well combined. Pour the egg mixture over the zucchini and corn mixture. Add the shredded cheese and gently stir to distribute the ingredients evenly.
  • Bake for 35 to 45 minutes, or until the center is set and no longer jiggles. Remove from the oven and let the casserole cool for 10 minutes before serving.
