Pepperoni Pizza Stuffed Biscuits
These pizza stuffed biscuits might just be the perfect and most versatile snack for after-school snacks, or to serve for the big game. They couldn’t be easier – using canned biscuits from the store and a few pizza toppings – and everyone loves that you get those familiar pizza flavors in a new way. The buttery biscuits are flaky and tender, too, adding a nice texture and extra flavor that takes every bite over the top!

Ingredients
- Refrigerated biscuit dough – This is usually available in the refrigerated aisle and makes these biscuit bombs super simple.
- Shredded mozzarella cheese – Can it be called “pizza” if it doesn’t include some molten mozzarella?
- Pizza sauce – For that classic pizza flavor. You can also use marinara sauce in a pinch.
- Italian seasoning – You can use any Italian Seasoning you’d like for this recipe. However, I prefer That’s Amore.
- Pepperoni slices – These are easy to find at any grocery store. Feel free to substitute with your favorite pizza fillings, like sausage, chicken, etc.
How to Make Stuffed Biscuits with Pepperoni
This is a super easy recipe to make and the first step in the process is probably the most important. Make sure that if you’re cooking with your kids, that you are the one making the initial cut.
The thing you’ll want to be mindful of is that you’re making a flat horizontal cut through he middle of your premade biscuit dough. After that, it’s easy from there! You can check the video below to see what I mean.
Once you make your horizontal cut, add your cheese, and seal up the biscuit – it’ll look similar to the below. Believe it or not, it’ll smash down nearly completely flat as the cheese absorbs into the biscuit dough leading to that HUGE cheesy pull when they are done baking.
- Pre-heat oven to 350°F.
- Laying the dough on your clean workspace, carefully make a horizontal slice to butterfly it, open up so you have 2 parts that are still connected
- Place a 3-finger pinch of shredded mozzarella cheese in between the layers of the biscuit.
- Fold the top part of the biscuit back over the cheese, creating a sandwich, and then seal the biscuit pinching the sides around the edges to encase the cheese fully.
- Lay the stuffed biscuit between two layers of parchment paper and gently flatten it using your palm. If needed, reseal the edges to keep the cheese securely inside.
- Once flattened, transfer the biscuit pocket to a baking sheet.
- Top the flattened biscuit pocket with pizza sauce, a generous amount of mozzarella cheese, your favorite pizza toppings, and a sprinkle of Italian Seasoning
- Bake in the preheated oven for about 15 minutes or until the biscuit is golden brown and cooked through, and the cheese on top is melted and bubbly. Be careful not to overcook or the biscuits may begin to burn.
- Remove from the oven and let it cool for at about 5 minutes before serving.
Pro Tip: Once you’ve gotten your dough flattened and stuffed, immediately move to your baking sheet and build the rest of the pizza biscuit there. It’ll make it much easier than trying to move it once you’ve gotten your toppings on it. You can use whatever toppings you like with these – the sky is the limit! Just make sure that if you’re deviating from the recipe that your ingredients are fully cooked before eating them.


Storing Suggestions
Once baked, the leftover stuffed biscuits can be stored just like regular leftover pizza. Store them in an airtight container in the fridge for 2-3 days. To reheat, either microwave briefly or pop them back in the oven or air fryer at 350F until heated through.
You can also store the leftovers for longer by placing them in a freezer bag. They’ll last for about 3 months.
Tips & Variations
- Try different fillings. Once you see how simple this recipe is to throw together, you’ll start to imagine so many different flavor combinations. Of course, you can replace the pepperoni with your favorite pizza toppings, but that’s just one option. Try making breakfast biscuits with cheddar cheese, a sausage patty, and scrambled eggs, or brisket bombs with leftover brisket, pickles, and BBQ sauce.
- Make homemade biscuits. Instead of refrigerated biscuits from the store, feel free to use your favorite homemade biscuit dough. You can also try using flaky premade pizza dough!
- Add veggies. If you’re serving these for dinner, it can be nice to add some veggies, too. Try adding diced green peppers, mushrooms, sliced onion, and more.
How to Serve
We usually like to either serve these as a fun handheld entree for parties and BBQs, or we serve them instead of regular pizza for dinner. Pair them with a caesar salad and call it a day!
