Smoked Queso Dip: Easy Carne Asada Recipe

Ingredients

  • Small block American cheese
  • 1 cup cubed pepper jack cheese
  • 1 cup cubed smoked gouda cheese
  • 1 can tomato and chili mix
  • 1 can fire roasted corn
  • 8 oz beer
  • 1 tbsp all purpose Mexican seasoning
  • 1 lb pre marinated carne asada
  • Chopped cilantro for garnish
  • Smoking pellets

Instructions

  • Add the cheeses, tomatoes/chilis, corn, seasoning and beer to a baking dish
  • Add pellets to smoker box
  • Light the back sear burner and place the smoker box next to it
  • Once it starts smoking, add the queso mix to the grill
  • Let the queso smoke for 45–60 minutes, stirring occasionally
  • While the queso is smoking, fire up the sear side burner and grill off the carne asada
  • Once the carne asada is cooked, chop it into bite size pieces and set aside
  • When the queso is melted and combined, remove from the grill
  • Top the queso with the carne asada and cilantro
