If you’re looking to spice up your next backyard gathering, let me introduce you to grilled salsa. This is not your average salsa; we’re talking about a smoky flavor that comes from grilling fresh ingredients right in your own backyard. It’s the perfect blend of roasted tomatoes, zesty lime, and a kick of jalapeño, all coming together to create a dip that’s way better than what you find in a jar.

Watch How to Make It

Trust me, once you try this, you'll never want store-bought salsa again.

So why go through the trouble of grilling your salsa? The answer is simple: the flavor. When you grill the veggies, they caramelize and take on that beautiful smoky essence that you just can’t replicate in a blender.

Plus, it's a fun way to enjoy fresh ingredients that are likely in season, making it a win-win for your taste buds and your wallet. So grab your grill, and let’s dive into making this delicious treat!

Why You'll Love This Recipe

First off, grilled salsa is a total crowd-pleaser. Whether you're hosting a summer BBQ or just looking to jazz up taco night, this salsa pairs perfectly with tortilla chips, grilled chicken, or even on top of a hearty burrito. The freshness of the ingredients combined with that smoky flavor will have everyone asking for the recipe – and you can take all the credit.

What I love about this recipe is its simplicity. You can throw everything on the grill, let it do its thing, and then blend it all up. It takes minimal hands-on time, so you can focus on enjoying your time with family and friends while the grill works its magic.

Plus, you can easily customize it by adding more heat or different herbs based on your preferences.

Ingredients & Tools You'll Need

Now, let’s talk about what you’ll need to whip up this smoky goodness. You'll start with some fresh veggies: two bulbs of garlic, a large jalapeño, two tomatillos, seven Roma tomatoes, and half a large white onion. Don't forget about the citrus – two limes and one lemon to give it that zesty kick.

And of course, a generous handful of cilantro to finish it off.

You’ll also want some olive oil, salt, and pepper to season everything. As for tools, you’ll need a grill, some aluminum foil for the garlic, and a blender to bring it all together. It’s all about keeping it simple, so don’t stress about fancy gadgets.

Just a little prep and you’re ready to roll!

How To Make It

Making this grilled salsa is straightforward and super satisfying. We’ll break it down into two parts: preparation and cooking. Get ready for some smoky flavors that will blow your mind!

Preparation

I start by getting everything measured and ready so the cook goes smooth. A little prep up front makes the rest of this recipe feel effortless.

A man in a blue cap, blue shirt, and brown apron uses a juicer in a kitchen, pressing fruit or vegetables into the machine.

Cooking

After the garlic has been roasting for a while and the smell is nothing short of heavenly, it’s time to add the rest of the ingredients. Toss the jalapeños, peeled tomatillos, and onion slices onto the grill. Also, throw on the lime and lemon halves, cut side down.

You want that char to develop, so keep an eye on everything and remove them as they get that beautiful grilled look.

The veggies should become tender and slightly charred, which brings out their natural sweetness. You’ll know they’re ready when the tomatoes are blistered and the onions are caramelized. Let everything cool for about twenty minutes – this is key because you don’t want to blend hot ingredients; trust me on this one.

Once they’re cool, toss everything into the blender, squeeze in the citrus juices, add the remaining salt, and blend it all until you reach your desired consistency. I like mine a bit chunky, but you do you!

Serving & Variations

Now for the fun part: serving your grilled salsa! Serve it up with tortilla chips for the ultimate snack or use it as a topping for grilled chicken or fish. It’s also great drizzled over tacos or burritos.

A grill with fresh tomatoes, a charred yellow squash, a lemon wedge, a green pepper, and metal tongs over the open flame. The grill is set outdoors on green grass.

If you want to get creative, consider adding some diced avocado for creaminess or a splash of hot sauce for an extra kick.

A common consensus among home cooks is: letting your salsa sit for a bit helps the flavors meld together, so if you can, make it ahead of time. You can also store any leftovers in the fridge for a few days, but trust me, they won’t last long. This salsa is always a hit and disappears faster than a cold beer in July!

There you have it – a delicious grilled salsa recipe that’s bursting with smoky flavor and fresh ingredients. This is the perfect addition to any gathering, and once you start making it, I promise you’ll be hooked. So fire up that grill, and let’s get cooking!
