It’s the cherry on top that brings everything together. Once you try these, you’ll find yourself making them over and over again.

Why You'll Love This Recipe

First off, they’re super easy. We’re talking about a handful of ingredients and minimal prep time. You can have these on the table in about thirty minutes, which is a win in my book.

And let's not forget about the flavor – the combination of ginger, garlic, and that sweet Thai chili sauce creates a punch that’ll have your taste buds dancing.

Another reason you'll love these tacos is their versatility. You can easily switch up the slaw or even the dipping sauce to match your mood. Feeling spicy?

Add some jalapeños to the slaw. Want to keep it cool? Maybe a yogurt-based sauce instead.

The world is your oyster – or taco, in this case.

Ingredients & Tools You'll Need

Let’s gather what we need. For this recipe, you’ll need some egg roll wrappers, which make the perfect little taco shells. Ground pork is the star of the show, mixed with ginger and garlic paste for that aromatic kick.

A person wearing a brown apron is spooning ground meat onto a square dumpling wrapper on a wooden cutting board, preparing to make dumplings.

And don’t forget the slaw mix – it adds that essential crunch and freshness.

You’ll also want some mayo, sriracha, and sweet Thai chili sauce for the dipping sauce. I like to go heavy on the sauce because it really elevates the whole dish. You’ll need olive oil for grilling, too, so make sure you've got that on hand.

Trust me, once you have everything laid out, you’ll feel like a pro in the kitchen.

How To Make It

Now let’s get to the fun part – cooking these Smash Dumpling Tacos. It’s all about layering those flavors and textures to create something amazing. You’ll see how simple and satisfying it is to put these together.

Preparation

First things first, let’s mix up that pork filling. In a bowl, combine the ground pork, chopped green onions, a cup of the slaw mix, sesame oil, ginger paste, and garlic paste. Use your hands or a spoon to mix it all together until nicely combined.

It’s important to get those flavors working together before we hit the griddle.

Next, take your remaining slaw mix and give it a little jazz with mayo, sriracha, and rice vinegar. Mix that up and set it aside for later. This slaw is going to be the perfect complement to your tacos.

And don’t forget to whip up your dipping sauce by mixing the soy sauce and sweet Thai chili sauce in a bowl. You’ll want this ready when it’s time to serve.

Cooking

Alright, let’s fire up the griddle! Heat it up on medium-high and add a few teaspoons of olive oil. You want it nice and hot before adding your tacos.

Rectangular pieces of flatbread or savory pancakes are being cooked on a large metal griddle, some with visible browning and toppings like vegetables or meat. A metal spatula rests on the griddle’s edge.

Take an egg roll wrapper and spread a thin layer of the pork mixture on one side. Don’t overdo it – you want to be able to fold it without spilling everything out.

Once the griddle is ready, place the taco pork-side down on the hot surface. You should hear that satisfying sizzle as they hit the pan. Cook each side for about three minutes, or until they’re golden brown and crispy.

You’ll know they’re done when the edges are beautifully crisp and the filling is cooked through. The smell? Oh man, it’ll have your neighbors knocking at your door.

Serving & Variations

Now comes the best part – serving these up! Grab your slaw and spoon a nice helping on top of each taco. Drizzle that delicious dipping sauce over them, and you’re ready to dig in.

A person in a brown apron squeezes yellow mustard from a bottle onto a bowl of shredded cabbage and carrots on a kitchen counter.

These little guys are perfect for sharing, but I won’t judge if you want to keep them all to yourself.

A common consensus among home cooks is that the toppings can really make or break these tacos. Feel free to get creative with your toppings – think chopped cilantro, fresh lime juice, or even some pickled veggies for an extra zing. You can also swap out the pork for chicken or shrimp if you're looking for a different protein.
