Each bite is a delightful mix of textures, from the crisp corn to the tender potatoes, and that zesty lemon juice just ties it all together beautifully.

It’s a mess-free way to serve up a crowd-pleasing dish, making it perfect for backyard barbecues or cozy dinners with loved ones.

Ingredients & Tools You'll Need

To whip up these grilled shrimp boil foil packets, you'll need a few key ingredients. We're talking about two pounds of large shrimp, peeled and deveined, which are the stars of this dish. Then, grab some small red potatoes, a half-pound of smoked sausage, and a few ears of corn.

A person wearing an apron pours melted butter from a Pyrex measuring cup onto a sheet of aluminum foil over a kitchen counter.

These hearty ingredients create the base of our feast.

You'll also need a couple of large lemons, garlic, and a generous amount of butter to make that rich sauce. For seasoning, Cajun and buttery seafood seasoning will deliver that classic shrimp boil flavor. Finally, don’t forget the fresh parsley for a pop of color and freshness at the end.

As for tools, you’ll need some heavy-duty aluminum foil, a large pot for boiling, and of course, a grill to bring it all together. A good pair of tongs will also come in handy for flipping and serving.

How To Make It

Let’s dive into how to create this delicious dish. It’s all about preparation and timing to ensure that everything comes together just right.

Preparation

Start by boiling a big pot of water. Add in two tablespoons each of Cajun seasoning and buttery seafood seasoning along with a stick of butter. Bring that to a rolling boil while you get the corn ready.

Cut each ear of corn into about five or six pieces. Once your water is bubbling, toss in the corn and the small red potatoes. Boil them for about ten minutes, which is just enough to get them tender without overcooking.

After that, it's time to prep your sausage and lemons. Slice the sausage into coins and cut one lemon into wedges. Melt down six sticks of butter (yes, you read that right), and mix in the juice of one lemon along with a bit more seasoning and minced garlic.

A person places a foil-wrapped item on the grill inside a Traeger smoker. Several foil-wrapped items are already on the grill, and the smoker lid is open. A brick wall and grass are visible in the background.

This mix is going to be the flavor bomb that soaks into everything.

Cooking

Now for the fun part! Take two sheets of heavy-duty foil, about 12 inches by 12 inches, and lay them out flat. Start dividing your ingredients-layer in the corn, potatoes, sausage, lemon slices, and of course, the shrimp into the center of each packet.

Leave one end open for now.

Next, drizzle that buttery seasoning mix all over your ingredients, then fold the foil over to seal it up, leaving one end open for some air to escape during cooking. Once you've got all your packets ready, it’s time to hit the grill.

You can use a traditional grill or a pellet grill like I do. Place your foil packets on the grill, close the lid, and let them cook for about 20 minutes. You’ll know they’re done when the shrimp turn that beautiful pink color, and the smell of garlic and seasoning fills the air.

Just be careful when opening those packets-steaming hot goodness is waiting inside.

Serving & Variations

Once your packets are off the grill, let them cool for a minute before carefully opening them. The steam will be hot, so watch out. You can serve these right in the foil for a casual vibe, or plate them up for a more formal look.

A person squeezes lemon juice into a large glass measuring cup filled with oil and spices, preparing a mixture on a kitchen counter.

Garnish with some extra parsley and a sprinkle of seasoning for that pop of color.

Now, as for variations, feel free to switch things up! Add in some bell peppers, zucchini, or even switch the shrimp for crab or lobster if you're feeling fancy. You can also change up the seasonings based on what you have-Italian seasoning works great too if you want a different twist.

A common consensus among home cooks is that adding a splash of hot sauce before serving takes this dish to the next level. It adds a little kick that complements the buttery flavor perfectly. And if you have leftovers, they can be stored in the fridge for a couple of days.

Just reheat and enjoy again!
