Ingredients

  • 1 pound of chopped rotisserie chicken
  • 16 oz block velvetta( I used the queso blanco)
  • 8 oz block cheddar
  • 1 can Rotel
  • 2 tsp Mexican seasoning ( I used Malcom’s grande gringo )
  • 16 oz box of your favorite pasta ( I used cellatina)
  • 1:/2 chopped white onion
  • 1/2 green bell pepper chopped
  • 1/2 red bell pepper chopped
  • 1 cup milk
  • If you can find the tub of onions and peppers mixed I would recommend that .

Instructions

  • In a greased crock pot .mix both cheeses , seasoning , Rotel , peppers & onions
  • Cook on low for two hours
  • Stir halfway
  • After two hours add cooked al dente pasta and milk
  • Cook for an additional 10-15 minutes then enjoy
