That’s when my trusty crock pot comes to the rescue with a big batch of Crock Pot Red Beans and Rice. There’s just something magical about the way those flavors meld together, filling the house with an irresistible aroma that makes everyone gather around the kitchen.

This dish is not just about the food; it’s about bringing people together. Whether it’s a cozy family dinner or a gathering with friends, this recipe hits the spot every single time. Plus, it’s super easy to throw together, which means more time to kick back and enjoy a cold one while it cooks away.

Trust me, you’re going to love this one!

Why You'll Love This Recipe

First off, let’s talk about the flavor. The combination of smoky sausage, tender beans, and a medley of veggies creates a taste explosion that’s downright addictive. And let’s be real – who doesn’t love a one-pot meal?

You’ll have minimal cleanup and maximum satisfaction. It’s like a warm hug in a bowl!

Not only is it delicious, but it’s also incredibly versatile. You can tweak the spices to suit your taste or even throw in some extras like hot sauce or jalapeños if you’re feeling adventurous. Plus, it’s budget-friendly, which means you can feed a crowd without breaking the bank.

Seriously, these red beans and rice are a crowd favorite, and they disappear faster than a cold beer in July.

Ingredients & Tools You'll Need

Now, let’s get down to the nitty-gritty and talk about what you’ll need to whip up this fantastic dish. You’re going to want about 2 pounds of rinsed red beans, so make sure to pick out any bad ones before you toss them in the pot. We’ll also be loading up on veggies like a large white onion, green bell peppers, and celery – they add sweetness and crunch that balances out the dish perfectly.

As for the meats, we’ve got a pound each of smoked sausage and salt pork. The sausage brings that hearty, smoky flavor, while the salt pork adds a salty richness that’s just heavenly. And don’t forget your seasonings!

I like to use Cajun seasoning (Malcom’s King Craw is my go-to), onion powder, cayenne, and chicken bouillon for that extra depth of flavor. Trust me on this one – it’s going to be a flavor bomb!

How To Make It

Alright, let’s dive into the cooking! This part is super straightforward, and you’ll see why it’s one of my favorite recipes. We’ll start with the prep and then move on to the cooking, so you can get a good rhythm going.

Preparation

First things first, grab your crock pot and start loading it up. Toss in those rinsed red beans, chopped onion, green bell peppers, celery, minced garlic, sausage, and salt pork. You want to pack it all in there, and don’t worry – it’ll all cook down beautifully.

The key here is to cover everything with water, making sure there’s about an inch of water above the beans. This ensures that everything cooks evenly and gets that rich flavor we’re after.

Now, season to taste with your Cajun seasoning, onion powder, cayenne, and chicken bouillon. If you’re like me and love a bit of kick, feel free to go heavier on the spices. Once everything’s in the pot and seasoned, it’s time to get cooking!

Cooking

Here’s the deal – you can cook this on low for 8 to 9 hours or on high for 5 to 6 hours. I usually opt for low and slow, letting those flavors develop deep into the beans. About 30 minutes before it’s done, take a moment to taste and adjust your seasonings.

This is your dish, so make it just the way you like it!

If by chance it turns out a bit too soupy for your liking, no worries! Just scoop out about a cup of beans, mash them up, and add them back into the pot. That’ll help thicken everything up nicely.

Once it’s done, serve it over a big scoop of 5-minute rice, and you’re in for a treat!

Serving & Variations

Okay, now that we’ve got our delicious meal ready, let’s talk about how to serve it. I love to ladle generous portions of the red beans over fluffy white rice. It creates a perfect balance of textures and flavors.

You can also top it off with some chopped green onions or a dollop of sour cream if you’re feeling fancy.

Want to mix things up? Try adding some cooked shrimp in the last half hour of cooking for a seafood twist. You could also toss in some diced tomatoes for a fresh pop or even switch out the meats for some shredded chicken.

The possibilities are endless, so get creative!

There you have it – a hearty, comforting dish that’s sure to be a hit. Crock Pot Red Beans and Rice is the kind of recipe that warms your soul and fills your belly without much fuss. I hope you enjoy making it as much as I do, and I can’t wait to hear how yours turns out!
