  • 16 oz box penne pasta
  • 3 thin chicken breast
  • 5 tbs olive oil ( divide )
  • Cajun seasoning
  • 1/2 pound smoked sausage
  • 1/4 red onion
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1/2 orange bell pepper
  • 1/2 yellow bell pepper
  • 2 tbs minced garlic
  • 1 block fresh parm
  • 32 oz heavy cream

Instructions

  • I started by seasoning my chicken fairly heavy with Cajun seasoning , I like to let that sit on the fridge for at least 30 min to an hour to soak up that seasoning
  • While that is in the fridge boil pasta to package directions
  • I add 3 tbs of Cajun seasoning to my pasta water , then when you cook and drain pasta reserve 3 tbs of pasta water
  • When ready warm half of your olive oil in a pan over medium heat
  • Use a pan large enough to hold all your ingredients
  • Sear your chicken breasts , this will take 4-5 minutes each side
  • Make sure chicken is 165 degrees internal
  • Slice sausage into coins , sear that once you remove your chicken
  • Once sausage has good color remove
  • If you need more olive oil add this to your pan at this stage
  • Now sauté all your onions and peppers
  • After 4-5 minutes add your minced garlic & let it go for another minute
  • Now add 1-2 tbs of pasta water
  • Start adding your heavy cream slowly & grating in parm
  • I used about
  • 5 cups of parm in total
  • Also adding about 1 tbs of Cajun seasoning every time I added more cream
  • Remember taste and adjust
  • Once sauce is at desired thickness, add pasta , chicken, & sausage
  • Mix and let simmer for 2-3 more minutes
  • Serve and enjoy!
