Ingredients & Tools You'll Need
Now, let’s talk about what you’ll need to make these Bacon Jalapeno Chicken Bombs. Grab 24 ounces of thin bacon-because we want that crispy goodness wrapped around our chicken. You'll also need six thin boneless skinless chicken breasts.
I usually like to slice these into strips for easier rolling.

Next up are the jalapeno slices. I used candied jalapenos for a sweet twist, but you can go with fresh if you prefer more heat. Then, we’ll need two blocks of soft cream cheese-because, let’s face it, cream cheese makes everything better.
A bottle of Allegro original marinade is key for soaking that chicken, and don’t forget some BBQ seasoning to sprinkle on top before cooking. A pack of toothpicks will help hold everything together, too.
How To Make It
Alright, let’s get into the nitty-gritty of making these bad boys. We’re going to start with some prep work to get everything ready before we dive into the cooking process. Seriously, you’ll want to do a little bit of chopping and marinating before you get your grill or oven fired up.
Preparation
First things first, cut the chicken breasts into strips and place them in a bowl. Pour that Allegro marinade all over the chicken and let it sit in the fridge for about 4 to 6 hours. This is where the flavors really start to infuse into the chicken, so don’t skip this step.
I usually find that overnight marinating works wonders too if you want to prep ahead.

Once the chicken is marinated, it’s time to assemble these chicken bombs. Lay down half a strip of bacon on a clean surface. Place a strip of the marinated chicken on top, add a good-sized jalapeno slice, and a plug of cream cheese.
Roll it all up tightly and secure it with a toothpick. Do this for all your chicken strips until you’ve got a baking dish full of deliciousness.
Cooking
Now comes the fun part-cooking! Preheat your oven or smoker to about 300-350 degrees. Place those assembled chicken bombs in a baking dish and sprinkle some BBQ seasoning over them for that extra flavor kick.
Cooking
When they’re ready, pull them out and let them rest for a minute. Trust me, the wait is worth it as the flavors settle in.
Serving & Variations
Now that you’ve got these Bacon Jalapeno Chicken Bombs ready to go, how do you serve them? I love to plate them up with some fresh veggies or a simple salad on the side. They also pair well with a tangy dipping sauce-think ranch or even a spicy aioli if you’re feeling adventurous.

Feel free to mix things up a bit, too. You could swap out the cream cheese for cheddar or pepper jack for an extra kick. If you want to make them a little lighter, use turkey bacon instead of regular bacon.
The options are endless, so let your creativity shine!
Wrapping Up
So there you have it-Bacon Jalapeno Chicken Bombs that are sure to impress. With simple ingredients and an easy cooking process, you’ll be the grill master of your backyard. Just remember to keep an eye on them while they cook; you don’t want to miss that moment when they come out perfectly crispy and delicious.
