It's all about getting that backyard vibe going without breaking a sweat.
Ingredients & Tools You'll Need
Alright, let’s get into what you’ll need for these tasty burgers. You’re going to start with a pound of 73-27 ground beef – trust me, that fat content is key for juicy burgers. You’ll also want some buns to cradle that deliciousness, and I recommend going with some soft, fluffy ones.
Don't skimp on the cheese either; we're using white American here, and I go heavy on it because, let's be real, gooey cheese makes everything better.
Now, the star of the show is that large onion, which we’ll slice up and fry to golden perfection. For the sauce, you’ll need a mix of sour cream, mayo, ketchup, horseradish, and some seasonings to really kick it up a notch. Don’t forget the Cajun seasoning for that extra flavor boost!
We’ll also be needing some eggs and all-purpose flour for that crunchy coating on the onions. With these ingredients, you're all set to create a burger that’ll impress even the pickiest eaters.
How To Make It
Now that we’ve got our ingredients lined up, let’s dive into the fun part – making these burgers! It’s a two-part process: first, we’ll prepare everything, and then we’ll cook it up. Just follow along, and soon you'll be flipping burgers like a pro.
Preparation
Start by forming your burger patties into 3 oz balls. This is where the magic begins! Let them chill in the fridge for at least an hour – this helps them hold their shape better while cooking.

While those are chilling, we can whip up that blooming onion sauce. Mix together the mayo, sour cream, ketchup, horseradish, garlic, salt, pepper, oregano, paprika, and cayenne. Give it a good stir, and then pop it in the fridge to let those flavors meld together.
Next, grab that onion and slice it thin. I like to use a mandolin for this – it makes things super quick and even. Now, here’s a pro tip: season your flour with Cajun seasoning to give those onions a little kick!
Once you've got everything prepped, it’s time to move on to the fun part: frying and cooking.
Cooking
Fire up your skillet and get that bacon up sizzling. Reserve just enough bacon grease to toast your buns – trust me, it adds a whole new level of flavor! Once that bacon hits around 350°F, it’s time to tackle the onions.
Coat them in your seasoned flour, dip them in the egg mixture, and then back to the flour for that double coating. Fry them until they’re golden brown and crispy – about 3-5 minutes should do it.
While those are frying, throw the burger balls on a hot griddle and sprinkle them with your burger seasoning. Here’s a little trick: once they’re seared on one side, flip them and press them flat. This keeps them from sticking and helps them cook evenly.
Season that other side too because we want flavor in every bite! Once they’ve got a nice crust, add your cheese and let it melt before pulling them off the heat.

Build your burger with all the goodies you love – that crispy onion, the creamy sauce, and of course, those perfectly cooked patties. You’re going to want to dig in right away because they smell incredible!
Serving & Variations
When it comes to serving these burgers, the sky's the limit. I love to pair them with some crunchy coleslaw or sweet potato fries for a fun twist. You can also load up your burger with all your favorite toppings – think bacon, jalapeños, or even avocado if you're feeling fancy.

And if you want to try something new, switch up the sauce by adding a bit of BBQ or hot sauce for that extra kick.
As for leftovers, if you happen to have any, they’ll keep in the fridge for about 3 days. Just reheat them in a skillet or the microwave, and they’re good to go. You can even prep the patties and sauce ahead of time, making it super easy to throw together a quick dinner during a busy week.
Wrapping Up
So there you have it! The Blooming Onion Smash Burgers are not only a feast for your taste buds but also a fun cooking experience. Once you make these, you’ll find yourself dreaming about them long after the last bite.
